Bunium bulbocastaneum This perennial plant is related to parsley and carrots. It first produces a thick crown of parsley flavoured greens and then is followed by lots of small crunchy tubers. Both the the flowers and seeds are used for seasoning, the leaves can be eaten like parsley when young. The roots are added raw to salads or steamed like potatoes. Greens are hardy to zone 8. A low growing addition to any food forest and very low maintenance!
