Smallanthus sonchifolius

Yacon is a species of perennial daisy traditionally grown in the northern and central Andes from Colombia to northern Argentina for its crisp, sweet-tasting, tuberous roots. Also known as Peruvian ground apple, Yacon has a similar texture to jícama. The tuber is composed mostly of water and fructooligosaccharide. Hardy in Zones 5 to 10, but it will produce in cooler climates with just fewer tubers. This is a wonderful, hardy food forest tuber. Plant right after your last frost date and harvest after your 1st hard frost. Will grow up to 8 ft tall!!!

From cultivariables: "Dosewallips tubers are large and long, tan with stripes and blotches of purple, becoming fully purple with exposure to light. The flesh is slightly more yellow than true white flesh. Yields can be very high with this variety, but the root balls tend to get huge, so they can be challenging to harvest, particularly without breaking some of the tubers. The tubers are very sweet, among the sweetest that I have tasted. Medium to tall. Early flowering and good seed set with another variety to pollinate."
