Good King Henry is a  perennial hardy  spinach analog related to quinoa. Leaves can be harvested and cooked like spinach and taste rich.  Good King Henry has a deep dap root and is perennial and is one of the first spring greens to emerge.   The flower stalks and flowers are edible as well as the seed.  An amazing addition to any food forest.  Generally 2ft tall. Benefits from partial shade in hotter climates to keep it from flowering right away
