Importance far exceeds any other variety, largest pear orchards planted with it exclusively. Revenue from sales amounts probably to as much as all other varieties combined. Succeeding admirably in Western States. Variable tree performance, on young trees and Quince stocks produces quite large fruit, on old trees or Pear stocks only medium or small.

Medium-sized fruit with smooth waxy skin, variable in size and form according to vigor of trees and stock. Flesh buttery, moderately juicy, aromatic, described as "like fine rich buttery chardonnay, sweet yet tart, with musky undertones and strong perfume." Ripens September. Historical importance immense though prone to cracking disease on sea-board. Fruit can develop bitter rot spots, disease destroyed nearly whole crops in some years.

One of the oldest pear varieties. Boston and eastern growers eventually produced in greatest perfection through superior culture, management, and use of Quince stocks. Featured in historical pomological literature. Many pear orchards planted with White Doyenne alone or large proportion. Suffered from cracking disease/bitter rot that nearly drove it from Eastern orchards.
