Fiesta White Sapote originating from Yorba Linda, California, in 1973. The 'Fiesta' white sapote is prized for its reliability and productivity as a very late-season cropper. The fruit is distinctly small, typically ranging from 1 to 2 inches, and features pale yellow, thick skin that endures handling well which is a rare trait for delicate white sapotes.

The 'Fiesta' is its smooth, melting, and soft flesh. It offers a good and well-developed flavor that is not overly sweet, which can be a refreshing alternative to some of the richer varieties. The skin itself is bitter and generally discarded before eating.
