Also known as Peruvian ground apple, Yacon has a similar texture to jícama. The tuber is composed mostly of water and fructooligosaccharide. Hardy in Zones 5 to 8, but it will produce in cooler climates with just fewer tubers. This is a wonderful, hardy food forest tuber. Plant right after your last frost date and harvest after your 1st hard frost. Will grow up to 8 ft tall! This variety produces purple tubers. Mother plants were sourced originally from Wellspring Gardens.
